Why do I Blog?

Life is so fast & furious with 3 young children, working from home, ect that I fear I will forget the lovely details of my girls' precious childhood.

My main motivation for blogging is to capture the every day moments...so I don't forget them before I have a chance to scrapbook. Sharing with you is just an added bonus. Keeping this blog has helped me get the photos off my camera's memory card and label/organize them on my laptop. It is the BEST tool I have for scrapbooking. I haven't ever been able to keep a journal, but this I can do. I don't pretend to have anything interesting to say. In fact I'm sure this little blog is boring to you, but to me it is priceless!

2 Adventures in Pressure Cooking

Earlier in the week I attempted cooking a lemon zest cheese cake in my pressure cooker. The recipe was easy enough and it only took 8 minutes to cook. I topped it with sliced strawberries and it tasted great, even it it was a bit on the soft side. I definitely want to try it again.

Yesterday I made BBQ pulled pork in it. A winner for sure! I just put 1 sliced onion and a cup of water in with the roast and set it for an hour. Next time I think I'll try cutting the meat in pieces first to make it easier to pull apart with forks. I stirred a bottle of Famous Dave's sauce and put it on buns. YUM! What a great alternative to burgers, especially since we don't have a BBQ grill.

I think that pressure cooked cheesecake would weird me out a little. When you get it fine tuned come make it up here, when you come for the wedding? okay.

Oh, Elle it was great! The pressure cooker basically steam cooks it really fast. Nothing weird there. Sure I'll make it for you when I get it down!
